Rubino has an emphasis on Maltese traditional recipes to recreate that homely atmosphere. We consistently strive to offer traditional favourite dishes such as the local goats cheese fried served with a homemade chilli jam, sfinec tal-incova which is a deep fried savoury doughnut stuffed with an anchovy based mix. A selection of mezes with different Maltese appetisers and dishes, served with the famous Valletta crusty bread is a firm favourite with both locals and foreigners.

Additionally Rubino's also offers a variety of pasta dishes and risottos. The risotto with fresh rosemary being a firm favourite. A selection of stuffed Maltese vegetables, lamb, rabbit and our famous Tagliata, which is a prime cut of beef, grilled to your liking and served sliced with Parmesan shavings and rucola.

Fish also plays a prime role in our menu with Malta's very own Lampuki (when in season) cooked in a pie or fried with a salsa piccante.

Rubino's is also renowned for its desserts most especially the Cassata Siciliana which can also be made to order for one to enjoy at home. Other sweets include the Cassata Gelato, a Maltese layered ice-cream and Imqaret, (dates wrapped in pastry) deep fried and served with honey and vanilla ice-cream on the side.

Last but not least, it is nearly a must for genuine food to be accompanied by one of our numerous local, European and new world wines. Most of our vintages available are carefully stored in our underground cellar which dates back to the early nineteen hundreds, thus ensuring they retain their individual complexity of aromas.
